31's isn't possible on a 2 inch lift, the tires will rub a great deal, you can go up to a 3 inch but still rub slightly when going off road, but you can trim the inside and the fender flares you can take off and trim an inch and a half up to 2 inches and still put the fender flare back on.

First of all, you have MT's, they usually don't wear well when you do alot of highway riding and you have to rotate them all the time. With what your doing I'd just go with some AT's like BFG's or Sports kings, Sports Kings hold up well and do a good job off road in my opinion.
